2 tablespoons vegetable or corn
oil
2 tablespoons finely minced
garlic
1/4 cup chopped onion
1/4 cup coarsely chopped tomatoes
1 1/2 pounds boneless pork
shoulder or butt, cut into
2-inch cubes
3/4 cup water
1/2 teaspoon sugar
4 tablespoons bagoong or
shrimp paste (sold in Oriental
food Store)
In a large skillet, heat oil. Saute the garlic, onion and tomatoes until garlic is
brown, onion and tomatoes tender. Add the pork and cook until pork is brown.
Add water and simmer for 30 minutes. Add sugar and bagoong or shrimp paste
and simmer for 15 minutes until pork is tender, stirring occasionally.
Serves 4
