1 3 -pound chicken, cut into
serving pieces
5 cups water
1 tablespoon ginger
1/2 teaspoon crushed peppercorns
2 teaspoons salt
2 cups quartered onion
1 cup celery cut into 2-inch
lengths
4 medium potatoes, quartered
1 small cabbage, quartered
1/2 cup scallion cut into 2-inch
lengths
In a large saucepan, combine chicken pieces, water, ginger, peppercorns, salt,
onion and celery. Bring to a boil. Lower heat, cover and simmer until chicken is
tender. Add potatoes. Simmer until tender. Add cabbage and green onions and
cook until soft. Serve hot.
Serves 6.
