2 pounds beef flank
2 tablespoons lemnnjuicee
1/4 cup soy sauce
pepper to taste
1 can Vienna sausaggee
6 pieces sweet pickles
4 strips bacon
2 slices sharp cheddar cheese
1/2 cup stuffed olives
2 hard-boiled eggs, halved
lengtlhwise
1 carrot, quartered lengthwise
4 tablespoons cooking oil
1 garlic clove, crushed
1 small onion, chopped
1 cup tomato sauce
3 cups water
salt and freshly ground pepper to
taste
parsley for garnish
Marinate beef in lemon juice, soy sauce and pepper to taste for 10 minutes Drain
and save marinade. Spread beef flank and arrange on it in lengthwise rows,
Vienna sausage, sweet pickles, bacon, cheese, olives, hard-boiled eggs and carrot.
Roll with meat grain lengthwise and tie with a string. Simmer in oil in a
mixture of marinade, garlic, onion, tomato sauce and water for I hour or until
meat is tender. Season with salt and pepper to taste.
Transfer meat roll to a platter, remove string and slice crosswise into
1/2-inch thicknesses. Pour sauce over meat and garnish with parsley.
Serves 6 - 8.
