2 cloves garlic, crushed
1/4 cup diced onion
1 tablespoon diced fresh ginger
1 2- to 3 -pound chicken, cut into
serving pieces
3 cups rice water
2 1/4 cups patis (see Glossary)
1/2 cup water
fresh vegetable leaves (spinach or
watercress)
Saute garlic, onion and ginger. Add cut-up chicken and season with patis and 1/z
cup water. Simmer until chicken is almost done. Add rice water and fresh leaves
and continue to cook until chicken is tender. Serve hot.
Serves 4.
*Mix 3 cups of water with 2 cups of rice. Drain off the liquid-this is rice water.
