Petits Fours
3/4 cup
chopped unsalted cashew
nuts
2 tablespoons all-purpose flour
1/2 cup
sugar
2 egg yolks, slightly beaten
2 tablespoons heavy cream
1/3 cup
butter, melted
I egg white, stiffly beaten
powdered sugar and glace
chernes
for decoration
Preheat oven to 350ø F. Mix the dry ingredients thoroughly in a
bowl.
Make a well in the center and add egg yolks, cream and melted butter.
Mix until well blended, then add egg white. Pour into l 1/4
inch-diameter
fluted paper cups and bake for 12 to 15 minutes.
Sprinkle a small amount of
powdered sugar on each petit four and
decorate each with a cherry to
serve.
Yield: 40 pieces
