Yolly's Free Recipes
2 pounds pork butt, cut into salt and freshly ground pepper to
2-inch cubes taste
2 pounds pig's knuckles 5 cloves garlic, minced
2 cups white vinegar 3 cups water
1/2 teaspoon marjoram 1 cup dried banana blossoms
4 bay leaves (sold in Oriental food stores)
1/4 cup soy sauce 4 ripe plantain bananas, sliced
1/4 cup brown sugar into 1/2 -inch lengths
Combine all ingredients except banana blossoms and plantains in a large sauce-
pan. Bring to a boil and simmer for 2 hours or until pork is tender. Add more water
if necessary. (A pressure cooker may be used to reduce cooking time. ) Add
banana blossoms and plantains and cook for another 15 to 20 minutes. Serve hot.
